I love making cookies during this time of the year and one of our favorites to make is my aunt's Raisin Spice Cookies recipe. These cookies are surprisingly flavorful and moist!
Easy Raisin Spice Cookies Recipe
1 cup all-purpose flour, sifted
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup butter, softened
1/2 cup brown sugar, firmly packed
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 tablespoon milk
3 ( 1 1/2 ounce packets) instant oatmeal with raisins & cinnamon
Preheat oven to 350 degrees F.
Sift together the all-purpose flour, salt and baking soda into a large mixing bow. Add in the butter, both sugars, large egg, vanilla extract and the milk. Beat batter until smooth with an electric mixer, about 2 minutes. Stir in the instant oatmeal packets until ingredients are well combined.
Drop by heaping tablespoons onto lightly greased cookie sheets, about 2 to 2 1/2" apart. Bake in a preheated oven for 7 to 9 minutes or until done. Makes about 2 to 2 1/2 dozen of cookies.
