When I make freezer jam, I always use the 100% natural Sure Jell ~ Premium Fruit Pectin. You will find various jam and jelly recipes within the Sure Jell box and this is the recipe that I used. This recipe makes five cups and I freeze mine in 1/2 cup portions. The freezer jam will keep for up to 3 weeks in the refrigerator or for up to 1 year in the freezer. Enjoy!
Strawberry Freezer Jam Recipe by Sure Jell
2 pints strawberries (2 cups crushed strawberries)
4 cups granulated sugar
1 box of Sure Jell
3/4 cup water
Mash up your fresh strawberries until you have 2 cups of crushed strawberries. Use a potato masher to mash them up, not a blend or a mixer! Place crushed strawberries into a mixing bowl and stir in the 4 cups of granulated sugar until well combined. This mixture needs to sit at room temperature for 10 full minutes.
In a saucepan combine together the water and contents from one box of Sure Jell fruit pectin. Bring mixture to a full boil and boil for 1 full minute, stirring constantly. Remove from heat. Stir this mixture into the fruit bowl until well combined and until the sugar has fully dissolved.
Spoon fruit jam into your prepared freezer containers. Let jam cool, seal and let them sit at room temperature for a few hours to allow them to set up. Label containers and freeze.
