Just because summer is over...doesn't mean you still can't enjoy the fruity taste of watermelon, especially in some easy-to-prepare beverage and cocktail recipes. Luckily for most people, fresh watermelon can be found year-round in your local grocery store, long after your garden is done for the season.

Sparkling Watermelon Vodka Lemonade Recipe
3 cups seedless watermelon pieces
3 lemons, juiced
1/2 cup vodka
1/4 cup fresh mint
2 cups Sparkling Ice Essence of Lemon Lime
Directions: In a blender, puree the watermelon and lemon juice, strain through a sieve into a drink pitcher. Add mint, vodka, and Essence of - then stir. Serve over ice and garnish with fresh mint. These cocktails are best served immediately after preparation.

I actually froze a lot of watermelon in pieces and they would be delicious in this recipe with its combination of lemon and watermelon.
